What Is Tart Cherry?

Montmorency is the sour cherry behind pie filling and juice concentrate, a different species from the sweet cherries sold as fruit. The color is the point: anthocyanins, the red-purple pigments that collect in the skin. This is a concentrated fruit powder, 500 mg per serving.

How It Works in the Body

Anthocyanins are flavonoids built around a positively charged oxygen ring, which is what makes them colored rather than pale. Chemically they are electron donors. They hand an electron to a reactive molecule and stay stable afterward, spreading the leftover charge across the ring system.

In Montmorency the main ones are cyanidin glycosides, cyanidin with a sugar attached. Tart cherry also carries a small amount of melatonin, the molecule the body uses to time its night.
